Watermelon Cake

Yesterday I was just too tired to everything. So nothing happened...well, today I took the time back. I sewed a t-shirt from old cotton shirt, made two seat covers, made some arranging and cleaning (should do a lot more!), went through papers, some writing and finally I made a cake. Actually I found the cake recipe yesterday. I have never heard about watermelon cake before! Have you? It's very simple and so suitable for summer party. Well, we don't have so warm anymore but I was so happy when I found a perfect recipe for my perfect small watermelon that I bought from Liike51. It's a great shop of organic and local food with some french delicacy, specialities and freshly baked bread.

What do you need?

One watermelon, you can decide how big you are going to make - I made a small one.


Then you can decide how to decorate your cake. I chose strawberries because I couldn't get blueberries or rasberries. I also used whole almonds and melissa. I also used vanilla extract and sugar water making those strawberries sweeter.

Coconut cream have to be cold when you whip it. Then you just spread the coconut cream carefully on the watermelon and decorate it. Then you can put it to the fridge for awhile before eating.

I think this is the most easiest cake I've ever made...except the coconut cream part - some mistakes - but nothing serious, haha. I decided to leave all the things I used doing the cake in the pics - somehow I liked the idea of more raw and casual than polished and tidy.

This is THE cake that is healthy one. I think. What do you think? Are you going to try? I think, I will do this on a hot day next summer.

ps. Oh, in some recipes it was written that melon should be seedless..well I think it worked well with seeds too...
